Hot and Spicy Vegetarian Breakfast Sandwich

I'm really not a fan of fast food breakfast sandwiches or taquitos; their eggs are nasty, i don't eat pork bacon or pork sausage, and the cheese is just...blech...and they're so greasy they don't even seem worth it to me.  I've been eating Morningstar Farms spicy vegetarian sausage patties for breakfast with eggs for a while.  It didn't occur to me until just a few weeks ago that I could combine these with some whole wheat bread and salsa for a delicious and healthy, lower calorie breakfast sandwich.






Hot and Spicy Vegetarian Breakfast Sandwich

To buy:
1 box of Morningstar spicy vegetarian sausage patties (recipe calls for 1 patty). You can find these in the frozen section near the other frozen breakfast foods.
1 carton of eggs (3 egg whites used)
1 jar of salsa (a couple of table spoons used)
1 loaf of whole wheat bread of your choice (2 slices used)

To do:

Preheat oven to 425*.
When over is heated, cook veggie patties and 2 slices of bread for about 10 minutes (until bread is toasted and patties are cooked through)
At the same time, cook  egg whites
When eggs, patties, and bread are all cooked, layer your sandwich. I put salsa on the slices of toast and then between the egg and patty.
